RECIPE: Add a splash of colour to any party with these gorgeous cake pops

Siucra Cake Pop

Sponge

Ingredients

  • 125g Siúcra Light Golden Brown Sugar
  • 125g butter, at room temperature
  • 2 medium free range eggs
  • 150g self-raising flour
  • 3tbsp milk
  • 2 teaspoons vanilla extract

Frosting

Ingredients

  • 200g Siúcra Icing Sugar
  • 70g unsalted butter, at room temperature
  • 50g cream cheese
  • 1 teaspoon vanilla extract

Decorations: Bag of candy melts

Required: Cake pop sticks, polystyrene or cake pop stand

Method

  1. Preheat oven to 180°C / 160°C fan.
  2. Line a bun tin with 12 paper cases.
  3. Beat together the butter and Siúcra Light Golden Brown Sugar until pale and fluffy.
  4. Beat in the eggs one at a time.
  5. Mix in the vanilla extract, flour and milk.
  6. Divide the mixture equally between the 12 cases.
  7. Bake for 15-20 minutes.
  8. Remove from the oven and when cool enough to handle take off outer case and put into a large bowl. Crumble them all together to make very fine breadcrumbs.
  9. Meanwhile make the frosting by beating the ingredients together.
  10. Add a spoonful of the frosting at a time to the crumbs and work in. You will probably not use all of the frosting. You only need enough to bind all the crumbs together. You should be able to form a ball of crumbs without it falling apart.
  11. Form 18-20 equal sized balls. Place these in the fridge for at least an hour to firm up.
  12. Remove the cake balls from the fridge.
  13. Melt the candy melts as per pack instructions. Once melted add some vegetable oil a tablespoon at a time until the mixture runs off the spoon.
  14. Dip a cake pop stick in some of the melted candy melts and then push the stick half way into a cake ball. Repeat for all of them. Then start back at the first one and dip it into the melted mixture turning gently to coat evenly.
  15. Push into some polystyrene or a cake pop stand and leave to set.
