PARTY FOOD: Easy goat’s cheese crostinis with red onion marmalade

The best way to people’s hearts at Christmas is through their tummies, so having lots of tasty treats around the house will put you in good stead for the festive season.  

These super tasty goat’s cheese crostinis with red onion marmalade are a major crowd pleaser. This recipe makes 20 – check it out below.

Crostini Ingredients:

  • 1 small baguette
  • 4 tbsp olive oil

Method:

  1. Preheat the oven to 180°C or 160°C fan.
  2. Slice up the baguette into thin slices and brush with olive oil.
  3. Place on a baking tray and pop in the oven for about 10 minutes until beginning to turn golden.
  4. Remove and allow to cool.

 

Red Onion Marmalade Ingredients: 

  • 1 tbsp rapeseed oil
  • 20 g butter
  • 500 g red onions, sliced thinly
  • 120 g Siúcra Rich Dark Brown Sugar
  • 80 ml red wine
  • 4 tbsp red wine vinegar

Method:

  1. Put the oil and butter into a medium sized pot and melt over a medium heat.
  2. Once melted add the sliced onions and stir to coat.
  3. Allow the onions to cook over a medium heat for 8-10 minutes stirring frequently.
  4. Add the Siúcra Rich Dark Brown Sugar and stir to coat the onions. Cook for 1-2 minutes until the sugar melts and comes to the boil.
  5. Add the red wine and red wine vinegar and bring back to the boil.
  6. Reduce to a simmer for 15-20 minutes until the liquid has evaporated stirring frequently.
  7. Turn off the heat and allow to cool.
  8. Store in a clean sterilised jar in the fridge for up to one month.

 

Goat’s Cheese Crostini Ingredients:

  • 1 log of goat’s cheese
  • 20 small sprigs of thyme to garnish

Method:

  1. Slice the goat’s cheese into 20 slices.
  2. Top the crostini with a slice of cheese.
  3. Top with a spoonful of red onion marmalade.
  4. Garnish with a sprig of thyme and serve.
