RECIPE: Your little Frozen fans will go wild for this cool cake

Got any Frozen fans at home? This, my friends, is the cake of all cakes for any little Elsa and Anna aficionados out there.

It’s perfect for upcoming birthdays or for making on a rainy, wintery day. We can just hear the renditions of ‘Let it Go’ from here!

Sure to impress your guests over the festive season, this delicious dessert makes a great alternative to traditional Christmas pudding.  The kids will also love helping you add the finishing touches with the cool decorations.

One cake makes 8-10 portions (you might need to hide some).

Here’s to some happy baking memories!

CAKE

Ingredients

  • 225 g butter, warmed to room temperature
  • 360 g Siúcra Caster sugar
  • 5 eggs
  • 450 g plain flour
  • 2 tbsp cornflour
  • 2 tsp baking powder
  • 1 tsp salt
  • 150 ml milk

Method

  1. Preheat the oven to 175°C.
  2. Grease three round cake tins (16-20 cm in diameter).
  3. In a large bowl, whisk the butter and sugar until light and creamy.
  4. Add the eggs one at a time.
  5. Sift in the flour, cornflour, baking powder and salt together with the milk, and stir into a smooth batter.
  6. Divide the batter between the three tins and bake for 35-40 minutes.

JAM

Ingredients

  1. 500 g of your choice of berries (e.g. raspberries or blueberries)
  2. 500 g Siúcra Sure Set Jam Sugar

Method

  1. Combine the berries and jam sugar in a pan and boil for 4 minutes, depending on the type of berry.
  2. Allow to cool.

CREAM CHEESE FROSTING

Ingredients

  • 100 g butter, warmed to room temperature
  • 300 g cream cheese
  • 360 g Siúcra Icing Sugar
  • ¼ tsp vanilla extract
  • 3 tsp gingerbread spices

Method

  1. Whisk all the ingredients together.

ICEBERG DECORATION

Ingredients

  • 225 g Siúcra Granulated Sugar
  • 50 ml water
  • 60 g Glucose Syrup
  • Blue food colouring

Method

  1. Heat the sugar, glucose syrup and water to about 160°C.
  2. Add blue colouring.
  3. Pour the sugar mixture onto baking parchment and leave to cool completely. Break into pieces.

Assemble the cake:

If the cake bases are too thick, cut them in half lengthwise. Spread a layer of jam over the base, keeping it away from the edges. Layer the remaining bases and jam. Spread the frosting over the top and decorate with the icebergs and hundreds and thousands (optional).
